Grilled Lemon Herb Salmon

Spring has sprung, people! When the weather starts warming up, I find that my meal choices transition from heavier comfort foods to lighter, healthier options. Although I love some slow-cooked chili or hearty chicken noodle soup, I like changing up the way I eat once spring arrives. One of my go-to’s is salmon. It’s healthy, light, and easy to make — all good things. There are tons of ways to prepare salmon, but one of my favorite salmon recipes is Grilled Lemon Herb Salmon. The brightness of the lemon, thyme, and rosemary immediately make me think of spring. We decided to make Grilled Lemon Herb Salmon to celebrate spring’s arrival a few days ago. We paired it with some grilled asparagus and garlic mashed cauliflower. Do yourself a favor and try mashed cauliflower — it’s incredible. Ingredients: (4 servings)

1lb Salmon Filet

4 sprigs Fresh Rosemary

4 sprigs Fresh Thyme

1 lemon

Black Pepper

Olive Oil

Instructions:

Step 1: Start by firing up the grill. Get the grill rolling at medium-high temperature. Charcoal grills are highly recommended but gas grills will do.

Step 2: Drizzle your salmon filet with some olive oil. Start to season your filet by laying the sprigs of fresh rosemary and pieces of thyme across the filet. Try to spread the herbs out evenly to ensure no bite is left behind.

Step 3: Cut your lemon in half and squeeze 1/2 of the lemon on the salmon. Take the other 1/2 lemon and cut into even slices. These pieces will go on your salmon later. Lastly, add a sprinkle of black pepper.

Step 5: Put your filet, skin side down, on the grill. Leave it on the grill for 10-15 minutes. Our filet was just over an inch thick so if you have a thicker piece of salmon, add extra time. Place the lemon slices on the filet with about 5 minutes left to cook.

Step 6: Once it is fully cooked, remove from the grill and allow it to rest for 5 minutes. After that, remove the sprigs of rosemary, serve, and enjoy!

  1. This recipe looks and sounds delicious! My favorite spring dish is pretty similar, except I love using Tilapia. That is usually my go-to for fish dishes.
    I love mashed potatoes or a nice baked potato with a fish dish, I know, not as healthy lol. I’ll have to give the mashed cauliflower a try one day!
    Also, I read your About page. I LOVE your name and how you came up with the name Oak & James. I have always wanted to spend some time in Richmond, VA. I’ve driven through before and it was absolutely beautiful! Keep up the great work!
